Sovrano Limoncello Cupcakes (with surprise!!!)

Ingredients for 12 cupcakes:

  • 180 g flour
  • 1 ½ teaspoons baking powder
  • 1 pinch of salt
  • 2 eggs
  • 150 g caster sugar
  • 110 g melted butter
  • 120 ml milk
  • 100 g icing sugar
  • 1 lime
  • 12 ripe strawberries but still, small size
  • 12 florets of fresh mint

Sovrano Limoncello icing:

  • 200 g of powdered sugar
  • 30 g glucose (or honey clear and transparent)
  • 50 ml Sovrano Limoncello

Preheat the oven to 180 degrees and place the cups for cupcake pan.
Beat eggs and sugar for at least a couple of minutes.
Add half the flour sifted with baking powder and salt, then the milk, the other half of the flour and finally the melted butter.
Pour into cups and bake for about 20 minutes.
Let the cupcakes cool completely on a wire rack, then with a small, sharp knife, dig in the center a small cone.
Place a strawberry on each cupcake and cover with the caps cut off, pressing lightly to close well.

Prepare the Sovrano Limoncello icing.
Heated glucose or clear honey (do not boil) and add sifted powdered sugar, add limoncello and stir vigorously with a whisk the frosting until it becomes smooth and homogeneous without lumps.

Put a teaspoon of Limoncello icing in the center of each cupcake (it will expand and you will smooth itself in a minute), and decorated with grated lime zest and mint.
