Sovrano Limoncello Puff

For about 10 molds of 60 ml

Ingredients for lemon jelly

  • 3 lemons
  • 90 gr. sugar
  • 2 tablespoons honey

Ingredients for lemon puff

  • 3 egg whites
  • 250 g cream
  • 65 g sugar
  • grated rind of one lemon
  • 4-5 tablespoons of lemon jelly
  • 3 g of gelatin

Ingredients for wafers

  • 25 gr. flour
  • 120 g sugar
  • 70 g chopped almonds
  • 50 g melted butter
  • 25 g lemon juice
  • 35 ml Sovrano limoncello

Zest the lemon keeping aside some strips for decoration. put the lemon zest in boiling water for 30 seconds, then dry them and put the lemon peel in a saucepan with the sugar, honey and the juice of three lemons. Cook them for about twenty minutes.
You will get a syrupy consistency that will become gelatinous on cooling. Keep aside.

Take the lemon peel cut into strips and keep them for decoration.

Soften the gelatin in cold water.
Put 65 gr. of sugar in a thick-bottomed saucepan, evenly wet with a little water and bring to 120°.
Beat the egg whites until stiff; mix with the cooked sugar continuing to mount. Add the gelatin. Continue to run the mixer until it cools down evenly joining the grated lemon rind and 4-5 tablespoons (according to taste) of lemon jelly previously prepared.
Using a spatula gently combine the cream into the mixture gloss (semi-fitted). Mix a third party, then, as soon amalgamated, the rest. Pour into silicone molds and store in the freezer until firm.
Extract the still frozen dessert and leave at room temperature for 5 minutes before serving.

Preparation of wafers:

Mix the melted butter with the chopped almonds.
Add sugar, lemon juice and Sovrano limoncello, mixing well, then combine the sifted flour. Put in the refrigerator to firm up the mixture.
Cover a baking tray with baking paper, pick up a little of the mixture and spread it on the plate with moistened fingers to form disks. Space well, as it will expand a lot in cooking.
Bake at 170 degrees until golden brown.
Arrange a waffle on the plate, overlap the breath of lemon, decorate with smaller wafers, the lemon zest and mint leaves.
