Sovrano Limoncello Roast Chicken

Ingredients for 4 people:

  • 1 chicken ready for cooking
  • 8 lemons
  • 1 sprig of sage
  • Sovrano Limoncello
  • extra virgin olive oil
  • salt

Salt the abdominal cavity of the chicken and insert 1 lemon, cut into quarters mixed with a few sage leaves. Pour 2 tablespoons of oil in a pan and brown the chicken on a medium flame, concentrating on the thighs which are the parts that require more cooking time. Cut another lemon in half and squeeze out.

After about 5 minutes of cooking salt the outside of the chicken and moisten with lemon juice. Combined with the remaining halved lemons bake at 160 °C for at least 1 hour or until the chicken is cooked.

Strain the juices, add 2 tablespoons of Limoncello Sovrano, and stir to make the gravy. Place the chicken on a platter, garnish with lemons and sage leaves. Serve with the Sovrano Limoncello gravy.
